Chicken Junglee Sandwich is my go to sandwich 🥪🤎
Here’s my healthier take on it. Packed with veggies, low fat mayo, and boiled chicken.
Pack it for those long road trips, and for your child’s school tiffin boxes. Make it at your tea parties or just enjoy it anytime by yourself.

Recipe: (makes 4-5 sandwiches)

Ingredients
Whole wheat bread slices
1 chicken breast
1 carrot shredded
2-3 spring onion whites and greens
2 tbsp low fat mayo
1 tsp chilli flakes, garlic powder
Salt pepper to taste

Method:
1. In saucepan boil water, to the boiling water add a salt and chicken breast. Cook it for 7 -8 mins. Take it off the heat and shred it with a fork or fingers
2. Chop the spring onions, shred carrots
3. In a bowl add the boiled chicken, vegetables, low fat mayo, seasonings and mix it well
4. Slather it on bread slices
5. ENJOY
