Keto Cauliflower Fried Rice is a low-carb, grain-free alternative to traditional fried rice. It's made by substituting rice with finely chopped cauliflower, creating a similar texture and appearance. The cauliflower "rice" is sautéed with a variety of vegetables, such as onions, bell peppers, and carrots, along with seasonings like garlic and soy sauce (or tamari for a gluten-free option). Optional ingredients like diced chicken, shrimp, or tofu can be added for extra protein.

Ingredients:

1 head of cauliflower, riced (use a food processor)
2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced bell peppers (use red, green, or a combination)
1/2 cup diced carrots
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons soy sauce or tamari (low-sodium for keto)
1/2 cup diced cooked chicken, shrimp, or tofu (optional)
Salt and pepper to taste
Chopped green onions for garnish (optional)

Instructions:

In a large skillet, heat the olive oil over medium-high heat.
Add the diced onion, bell peppers, and carrots. Sauté for 5-7 minutes until they begin to soften.
Stir in the minced garlic and cook for another 1-2 minutes.
Push the veggies to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until cooked through.
Add the riced cauliflower and soy sauce to the skillet. Stir to combine.
If you're adding meat or tofu, add it now and cook until heated through.
Season with salt and pepper to taste.
Garnish with chopped green onions if desired and serve hot.
