🔸Ingredients:
1️⃣ Dough:
- 380g (2 1/2cup) bread flour
- 6g (1 1/2 teaspoons) instant yeast
- 6g (1 teaspoon) fine sea salt
- 160g (2/3 cup) whole milk
- 50g (4 tablespoons) sugar
- 42g (3 tablespoons) unsalted butter
- 1 whole egg (54g)
2️⃣ Custard Spread:
- 250g whole milk
- 100g sugar
- 2 egg yolks
- 25g cornstarch
- 1g salt
- 2g vanilla extract
3️⃣ Filling: 120g raisins
4️⃣Syrup:
- 25g sugar
- 40g water

🔶 Instruction:
- Prepare the dough: stir the dried ingredients together. Then add egg, milk, butter and knead until the dough forms a smooth ball. Proof for 1 hour or more until at least double in size.
- Prepare the raisins: soak raisins in warm water. Drain before adding in the dough.
- Prepare the custard: in a saucepan, add milk and turn on high heat to warm up the milk. Turn off heat before boiling. Add the rest of the ingredients in and stir to combine. Turn back on medium heat and stir continuously until thick. Use a sifter to smoothen the sauce if needed.
- After the dough rises double in size, bring it to a clean surface, knead for a couple of minutes. Roll into a large sheet, spread custard, then sprinkle raisins, roll into a log and cut 8-10 pieces. Place the rolls on a baking pan, proof again in 60 minutes until double in size.
- Brush egg wash and bake at 350F in 25 minutes until brown.
- To make syrup to brush on the finishing: add sugar and 1/2 water in a pan, turn on high heat and cook until sugar turns brown, add the rest of water and cook until thick.
