"Spicy and Succulent: Whip Up High-Protein Airfryer Chilli Chicken in Just 30 Minutes for Meal Prep Delight!"

Ingredients
chicken marinade:
450 grams chicken breast or thigh, cubed | use paneer for vegetarian option
1 tbsp minced ginger garlic paste
4-5 garlic cloves, minced
1 tsp salt
1 tbsp chilli vinegar
1 tbsp soy sauce
3 tbsp rice flour
1 tsp oil, for the airfryer
for the stir fry,
1 tsp oil
1 tbsp minced ginger and garlic
2 green chillies, split
1 onion, cut into cubes
1 bell pepper, cubed ( i used a mix of green, yellow and red )
sauce:
2 tbsp dark soy sauce
1 tbsp vinegar
2 tbsp green chilli sauce
1 tsp black pepper or white pepper
slurry:
1/8 cup water + 1 tsp cornflour - for a light coating OR
1/2 cup water + 2 tsp cornflour - for a gravy
salt, to taste
coriander + sesame seeds for garnish
Method
combine chicken with all the marinade ingredients and set aside ( i like to do this in the morning so flavours absorb slightly but you can do it just before cooking too )
preheat airfryer to 180 degrees C while thats happening , add rice flour to the chicken and coat well ( this is what makes it crispy so dont skimp :) )
add to the airfryer and cook till done
while thats happening, in a pan take oil + garlic + onion + chilli + capsicums and stir fry
in a bowl combine all ingredients under “sauce” and add to the pan, let it cook for a minute then add in the slurry ( mentioned both quantities if you want it dry or wet gravy!!
add in airfried chicken to the mix and coat evenly
garnish and dig in hot and fresh :)
