(cut out the cheese to make it uunder 300 calories a serve)
Ingredients
200 grams button mushroom
1 tbsp minced garlic
small knob of butter
1 green chilli, finely sliced
1/4 cup amul cream
1 tbsp milk, if needed to thin it out
20 grams cheese, grated (optional)
4 eggs
1 tsp black pepper
pinch of salt
1 tsp red chilli flakes
handful of chopped coriander
Method
add mushrooms to a pan and allow to brown, add in the butter, garlic and green chilli
cook for a minute then add in the cream and a little milk to thin the mix
add in your grated cheese, pepper, salt and chilli flakes
crack your eggs on top and cover and cook till eggs are done, i love a good runny yolk with the eggs perfectly cooked
top with chopped coriander and enjoy with toasted bread
