Meal Time Freedom: Pineapple Honey Ginger 🍗

Ingredients:
1 C honey ( can also use REAL maple syrup)
1/2 C grated ginger (I used a squeeze tube variety)

18-20 oz can pineapple tidbits in juice (keep the juice)

1/3 C minced garlic

1 C citrus juice ( orange, tangerine ,grapefruit juice work great)

1 Tbs smoked paprika, cayenne pepper (*Optional but adds extra pop)

Directions:

In medium bowl combine the reserved pineapple juice and citrus juice

Next add all other ingredients EXCEPT the pineapple tidbits and whisk until well blended in the juice.

Pour this juice blend into a 1 gallon bag and add 2 lbs. chicken breasts or thighs

** (4 chicken quarters or 8-10 chicken drumsticks can also be used)**

Squoosh the juice mix until all meat is covered then open bag and pour in the pineapple tidbits.

Carefully remove all air from bag and lay flat in freezer until fully frozen

To Prepare:

Thaw overnight in refrigerator.

Shake bag to make sure all juices, pineapples and seasonings are well mixed then

A:) Dump in slow cooker for 4-6 hours on low or 2-3 hours on high (meat thermometer should read 165 degrees

B:) Dump all ingredients into a greased 9 x 9 baking dish. Cover tightly with aluminum foil and bake in 375 degree pre-heated oven for 30 minutes or until 150 degrees internal temperature. At this temperature, remove cover and turn all the meat over. Return meat to oven for another 15-20 minutes or until internal temperature reads 165 degrees then remove from oven and allow to sit for 5 minutes before serving.

**Other types of meats can be used as long as they are not ground.**
