Eggs Fry Rice & Chicken Menchorian

Instructions:
Heat 1 tbsp vegetable oil in a pan or wok over medium heat. Add garlic and fry until fragrant.
Push the garlic to one side, and pour in the beaten eggs. Let it set for a few seconds and then scramble it.
Add the mixed vegetables and cook until tender.
Add the rice to the pan. Pour the soy sauce and sesame oil (if using) over it. Stir-fry for 3-5 minutes until well mixed and hot.
Add green onions, salt, and pepper. Stir well.
Remove from heat and serve.
Chicken Manchurian:
Ingredients:
2 boneless chicken breasts, cut into bite-size pieces
2 tbsp soy sauce
1 tbsp cornflour (cornstarch)
Salt to taste
2 cloves garlic, minced
1 inch ginger, minced
2 green chilies, finely chopped (optional)
1/4 cup diced bell peppers (any color)
2 tbsp tomato ketchup
1 tbsp chili sauce (adjust according to taste)
2 cups chicken broth or water
3 tbsp vegetable oil
Green onions for garnish
Instructions:
In a bowl, marinate the chicken pieces with soy sauce, salt, and cornflour. Let it rest for 15-20 minutes.
Heat oil in a pan and fry the chicken pieces until golden brown. Remove and set aside.
In the same oil, sauté garlic, ginger, and green chilies until fragrant.
Add the bell peppers and sauté for 2 minutes.
Pour in the tomato ketchup and chili sauce. Mix well.
Add chicken broth or water. Bring it to a boil.
Once boiling, lower the heat and add the fried chicken pieces. Let it simmer for 5-7 minutes until the chicken is cooked through and the sauce thickens slightly.
Garnish with green onions.
Serve with the egg fried rice.
