Sweet Potato 🥔 Doughnuts Recipe. It's So Delicious That it Disappears in an instant

For the doughnuts:
- 1 cup mashed sweet potatoes (about 2 medium-sized sweet potatoes)
- 2 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup milk
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract

For the glaze:
- 1 1/2 cups powdered sugar
- 3-4 tbsp milk
- 1/2 tsp vanilla extract

**Instructions:**

**1. Prepare the Sweet Potatoes:**
- Preheat your oven to 375°F (190°C).
- Wash and prick the sweet potatoes with a fork.
- Bake them in the preheated oven for about 45-60 minutes or until they are soft and can be easily mashed.
- Let them cool, then peel and mash them. Measure out 1 cup for the doughnuts.

**2. Prepare the Doughnut Batter:**
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

- In a separate bowl, whisk together the mashed sweet potatoes, eggs, milk, melted butter, and vanilla extract until well combined.

- Add the wet mixture to the dry mixture and stir until just combined. Do not overmix; a few lumps are okay.

**3. Shape and Fry the Doughnuts:**
- Heat oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).

- Drop spoonfuls of the doughnut batter into the hot oil, making sure not to overcrowd the pot. Fry until they are golden brown, about 2-3 minutes per side.

- Remove the doughnuts from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.

**4. Prepare the Glaze:**
- In a bowl, whisk together the powdered sugar, milk, and vanilla extract until you have a smooth glaze. Adjust the thickness by adding more milk if needed.

**5. Glaze the Doughnuts:**
- Once the doughnuts have cooled slightly, dip each one into the glaze, allowing any excess glaze to drip off.

**6. Serve and Enjoy:**
- Let the glazed doughnuts set for a few minutes, and then they are ready to be enjoyed!
