ROASTED CHICKEN STOCK and GLACE
â–ª5-6lbs or 2.5-3kg chicken backs
â–ª1lb or .5kg chicken feet
â–ª1 onion, cut into chunks
â–ª3-4 carrots, rough chopped
â–ª3-4 stalks celery, rough chopped
â–ª1 leek, stem and top removed, rough chopped, & rinsed
â–ªOlive oil
â–ªWater
â–ª25g or 1Tbsp tomato paste
â–ª50-70g or 4-5Tbsp unsalted butter
â–ªsalt

Lay chicken backs and feet onto sheet tray and roast at 475F/245C for 30-40min.
Place chopped onion, carrots, celery, and leek onto tray. Toss with olive oil and roast at 475F/245C for 30 minutes until caramelized
