Sweet & Moist Raspberry Sponge Cake - Quick Recipe Packed with Fresh Raspberry Flavor

This light and fluffy raspberry sponge cake is a delightful treat! It's made with simple ingredients like eggs, sugar, flour and fresh raspberry jam. The cake is layered with jam and frosted with tangy lemon icing for a sweet-tart flavor combo. With just 5 eggs and no butter, this cake comes together quickly for an easy weeknight dessert. It's impressive enough for company but simple to whip up anytime you need a fruity, moist cake.

Ready in 1 hour 45 minutes
Serves 10 people
300 calories / serving

Ingredients:

SPONGE:
5 eggs
120 grams sugar
150 grams flour
30 grams oil
1 tsp vanilla extract
Lemon zest
pinch of salt and a sprinkle of salt
FILLING:
400 g jam / conserve ( I used homemade conserve )
ICING:
30 ml lemon juice
150 grams vanilla icing sugar

Preparation:

Preheat oven at 170℃
Separate the eggs
Beat egg whites with the pinch of salt
When the egg whites are stiff add sugar
Keep whisking until you have stiff peaks
Gradually at the yolks, vanilla extract, the sprinkle of salt and lemon zest
Mix a bit, then add the oil
Mix for a few more seconds
Add the flour all at once and gently fold
Pour into a baking dish and bake for 15-20 minutes
Cool down
Slice the cake into 3 layers
Keep two tablespoons of jam aside
Spread half of the jam on the bottom layer
Add the middle layer on top
Spread the rest of the jam on it
Add the top layer and spread the two tablespoons of the jam you set aside
Leave the cake to rest for 1-2 hours
Add the vanilla sugar in a bowl and gradually add the lemon juice
Mix well and you should get the consistency like sour cream
Pour the mix over the top layer of the cake
Allow to dry for 1-2 hours, so the icing sugar forms a crust as it dries

Tips:

If you feel the cake is too thin to be sliced in 3 layers, you can slice it in 2 layers, but then you would add the jam on the bottom layer and the quantity set aside on the top layer.
