Ahsoka's lack of emotion to me wasn't even something to think about. It made sense as this is a time of unrest and fear with Thrawn returning and Ezra to be found. Once Anakin Skywalker returned, you can see Ahsoka's emotions returned as well. She's not going to be happy after fighting Vader and knowing now that Anakin turned into that machine.
