Left over Courgetts,,, Make this

Krissy gets busy canning our homemade Amish style hot dog relish....

AMISH Hot-Dog Relish:-
10 cups of grated courgette
4 cups white onions chopped as small as you can
1 red pepper
1 green pepper ( I substituted with green tomatoes so will let you know how this went)
Place all in a big bowl
Sprinkle 4 tbsp of sea salt over and mix. Cover and leave overnight

Next morning drain and rinse well

Add 2 cups vinegar I used malt but I have heard people use white or apple cider vinegar too
5 cups sugar
1 teaspoon ground tumeric
1 teaspoon Mustard powder
2 teaspoon celery seeds
1 teaspoon cornflour
Pinch of pepper
Boil and the simmer for 20 mins
Label into hot jars and waterbath for 20 minutes

This recipe managed to use 2 of my large courgettes .
It's made 6 454g jars plus a small tester jar
