Avocado and Bacon Breakfast Salad:
Ingredients:
2 ripe avocados, halved and pitted
4 eggs
4 slices of bacon
Salt and pepper to taste
Fresh herbs for garnish (optional)
Instructions:
Preheat your oven to 350°F (175°C).
Place the avocado halves in a baking dish, ensuring they are stable and won’t tip over.
Crack an egg into each avocado half, season with salt and pepper, and place the dish in the oven.
While the eggs are baking, cook the bacon until crispy in a skillet over medium heat.
Once the eggs are cooked to your liking (about 15-20 minutes for runny yolks), remove them from the oven.
Crumble the crispy bacon over the avocado and eggs, and garnish with fresh herbs if desired.
