SALMON POKE BOWL RECIPE

Cook Time: 5 minutes
Serves 4

INGREDIENTS
8 Asparagus Spears (optional)
2 cups cooked rice (brown or white)
1 pound smoked salmon (or fresh sushi grade salmon)
1 large cucumber, thinly sliced
1 1/2 cups frozen peas, thawed or 1 cup edamame, shelled
1 avocado, peeled, pitted & sliced
1 large carrots, shredded or thinly sliced
1/2 head purple cabbage, shredded
Sesame seeds (optional)
Sriracha-style Chile Sauce (optional)
Walden Farms Sesame Ginger Dressing (optional)

You can even use cauliflower rice for this recipe! Prep the rice ahead of time as it can take longer to make. If you want more calories, add more rice for building muscle and bulking.

Per Serving: 315 Calories; 28g Protein; 21g Carbs; 9g Fiber; 15g Fat
