Mutton Kaddu, also known as Lamb and Pumpkin Curry, is a delicious Indian dish that combines tender pieces of mutton (lamb) with chunks of pumpkin in a flavorful gravy. Here's a step-by-step recipe to make Mutton Kaddu:

Ingredients:

For Marinating the Mutton:

500 grams mutton (lamb), cut into pieces
1/2 cup yogurt (curd)
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
For the Curry:

2 cups pumpkin, peeled and diced into chunks
2 onions, finely chopped
2 tomatoes, chopped
2-3 green chilies, slit
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds (methi seeds)
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to your spice preference)
Salt to taste
2-3 tablespoons oil
Fresh coriander leaves for garnish
Instructions:

Marinate the Mutton:

In a mixing bowl, combine the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well to coat the mutton pieces evenly. Allow it to marinate for at least 30 minutes or longer if possible.
Sear the Mutton:
