One-pot cheesy masala pasta is a delightful and easy-to-make dish that combines the rich flavours of Italian pasta with the bold spices of Indian masala. As the name suggests, this dish is prepared in a single pot, making it a hassle-free meal that's perfect for busy weeknights. The creamy and cheesy texture of the pasta, along with the aromatic blend of spices, makes it a hit with both kids and adults. Preparation Time - 10 minutes
Cooking Time - 20 minutes
Serves - 2-3

Ingredients:
- Oil - 1 tbsp
- Butter - 2 tbsp
- Cumin seeds - ½ tsp
- Garlic, chopped - 1 tbsp
- Green chillies, chopped - 1 no (½ tbsp)
- Onions, chopped - 1 no (½ cup)
- Tomatoes, puree- 2-3 nos (1 cup)
- Tomato ketchup - 2 tbsp
- Dry oregano - ½ tsp
- Red chilli flakes - ½ tsp
- Pav Bhaji masala - 1 tsp
- Salt - 1 ½ tsp or to taste
- Black pepper powder - ½ tsp
- Penne pasta, raw- 1 ½ cups (or any other small pasta.
- Carrots, diced - ½ cup
- Sweetcorn, frozen & defrosted - ¼ cup
- Water - 3 cups (hot water))
- Capsicum diced - ½ cup
- Butter - 2 tbsp
- Grated cheese - ½ cup
- Chopped coriander- 2 -3 tbsp

Preparations:
- Chop onions, tomatoes, capsicum, carrots, and coriander, and set them aside. Defrost a portion of sweetcorn.
- Cook the pasta as per the packet instruction and drizzle some oil and mix after boiling so it does not stick to each other.

Cooking Instructions:
- Begin by heating a pan on medium heat and adding oil, butter, cumin seeds, garlic and green chillies. Allow the cumin seeds to crackle before adding onions. Saute until the onions turn translucent on medium heat for 4-5 minutes. Do not brown the onions for this dish.
- Next, add tomato puree, ketchup, oregano, red chilli flakes, pav bhaji masala, salt, and black pepper, and stir well. Cook on a medium flame for 4-5 minutes.
- Once the tomato mixture is cooked, add the chosen pasta, I am using penne pasta you can use any pasta of your choice, along with carrots, and water, and stir once. Cover the pan and cook on medium-low flame until the pasta is cooked. Make sure to stir the pasta occasionally to prevent it from sticking to the bottom of the pan.
- After the pasta is almost cooked, add capsicum and sweet corn and cook for 2-3 minutes on medium flame. Check for seasoning and consistency and adjust as per your preference at this stage.
- Lower the flame and add processed cheese and butter. Mix and cook for another minute. Finish with freshly chopped coriander leaves and gently stir.
- Your masala pasta is ready, serve hot with some cheese chilli garlic bread/toast.
