How to make Fresh Homemade Tostadas

Super easy way to make homemade fresh Tostadas, great Mexican Dish, filled with amazing flavors.

Tostadas
Ingredients:
makes approx. 16 Tostadas

16 Crunchy Tortillas, 6" (Tostadas)
8 Roma Tomatoes
1 Cucumber
1 Red Onion
16 Shrimp (frozen) optional
1 Jalapeno
1 bundle Cilantro
Salt
Pepper

Refried Beans (recipe on our rumble)
1/2 sm Green Cabbage (sliced)
3 Avocados (sliced)
Sour Cream
Dried Cheese (crumbled)
8 Radishes (sliced)
2 Lemon (wedges)

Cut each Roma Tomato in half, remove the core and juice. Small dice the Tomatoes and set aside
Peel stripes of the Cucumber, cut off ends. Cut Cucumber in half lengthwise and remove the seeds. Small dice and set aside.
Chop Red Onion and set aside.
Thaw frozen Shrimp and remove the tails. Cut each Shrimp in thirds and set aside.
Chop Jalapeno and set aside.
Chop Cilantro and set aside.
Use large bowl and combine Tomatoes, Cucumber, Red Onion, Shrimp, Jalapeno and Cilantro. Season with Salt & Pepper to taste, mix well.
Cover with plastic wrap and refrigerate for 1 hour.
Remove plastic, stir Tomato Mixture to combine the flavors.

To build a Tostada:
Spread a thin layer of warm Refried Beans over the Crunchy Tortilla. Add a spoon full of Tomato Mixture, sprinkle shredded Cabbage on it. Top with Avocado slices, a dollop of Sour Cream and crumbled dried Cheese. Serve with a Lemon wedge and sliced Radishes on the side.
