It's day 29 of the #EveryBitCountsChallenge and today Kristy will show you how to stock your pantry with a simple yet delicious ready-to-go side dish to add to any dinner. With a few simple ingredients and a big batch of corn, you can have these handy jars of corn medley mixes that are perfect to accompany many of your favorite dishes. Ingredients:
-8 cups corn kernels
-4 cups diced bell peppers
-1 3/4 cups diced celery
-1 cup diced onion
-4 cups white vinegar
-1 1/4 cups sugar
-2 TBS salt
-2 TBS dry mustard
-2 tsp celery seeds
-2 tsp ground tumeric
-1/4 cup water
-2 TBS clearjel
