Ingredients:
500 grams ground meat (lamb, beef, chicken, or a combination)
1 medium onion, finely chopped
2-3 cloves of garlic, minced
1-inch piece of ginger, grated
1-2 green chilies, finely chopped (adjust to taste)
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon red chili powder (adjust to spice preference)
1/4 teaspoon turmeric powder
1/4 cup fresh coriander leaves, finely chopped
1/4 cup fresh mint leaves, finely chopped
Salt to taste
2 tablespoons gram flour (besan) - acts as a binding agent
1 tablespoon lemon juice
2 tablespoons oil
Wooden skewers, soaked in water (if using wooden skewers)
Instructions:
In a mixing bowl, add the ground meat, finely chopped onion, minced garlic, grated ginger, chopped green chilies, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, chopped coriander leaves, and chopped mint leaves.
Add salt to taste. The salt helps in releasing moisture from the meat, so don't be too conservative with it.
Mix all the ingredients thoroughly with your hands. This process helps in combining the flavors and breaking down the meat fibers.
Add gram flour (besan) to the mixture. This acts as a binding agent, helping the kebabs hold their shape during grilling.
Pour in the lemon juice and oil. These ingredients not only add flavor but also aid in keeping the kebabs moist during cooking.
Continue to knead and mix the mixture for a few more minutes until all the ingredients are well combined.
Preheat your grill or oven to medium-high heat.
Take a handful of the mixture and mold it onto the skewer, forming a cylindrical shape. Gently press the mixture onto the skewer to ensure it holds together.
Repeat the process for the remaining mixture and skewers.
Place the skewers on the preheated grill or in the oven. Cook for about 10-15 minutes, turning occasionally, until the kebabs are cooked through and have a nice char on the outside.
Once cooked, remove the seekh kebabs from the grill or oven and let them rest for a couple of minutes.
Serve the Seekh Kebabs hot, garnished with additional chopped coriander leaves and accompanied by mint chutney, sliced onions, and lemon wedges.
