Ingredients:
- 3 cups cooked rice (preferably day-old)
- 1 cup diced chicken or shrimp (optional)
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste

Instructions:
1. Heat the vegetable oil in a large pan or wok over medium heat.
2. Add the diced chicken or shrimp (if using) and cook until cooked through. Remove from the pan and set aside.
3. In the same pan, add the diced carrots, bell peppers, onions, and frozen peas. Stir-fry for a few minutes until the vegetables are slightly softened.
4. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
5. Add the cooked rice to the pan and stir-fry everything together, breaking up any clumps of rice.
