How To Make Amazing Mini Apple Cakes

What a great Recipe, Mini Apple Cakes are perfect for special Occasions. You can serve them at Parties, Brunch or bring them to a Potluck.

Mini Apple Cakes
Ingredients:
6 Cosmic Crisp Apples
2 cups Flour
1-1/4 tsp Baking Powder
1 tsp Nutmeg
1/2 tsp Salt
1 cup Butter, soft
3/4 cup Sugar
3 Eggs, room temp
Zest of 1 Lemon

Peel, core and dice Apples.
(Tip: keep cut Apples in Lemon Water until needed to prevent oxidation)
Combine Flour, Baking Powder, Nutmeg & Salt, whisk and set aside.
Cream together Butter and Sugar.
Add one Egg at a time.
Mix in Lemon Zest.
Incorporate Flour Mixture in Batches.
Fold in drained & dabbed dry Apples.
Refrigerate Batter 20 Minutes.
(Tip: keep Batter refrigerated between bakes)
Preheat Oven 350°F
Line Baking Sheet with Parchment Paper & brush lightly with Butter.
Use Dinner Spoons, place 5 or 6 heaps of Batter equally spaced apart on Baking Sheet.
(makes approx. a total of 20 Mini Cakes)
Bake 20 - 22 Minutes.
Rest 3 Minutes on Baking Sheet, cool completely on Wire Rack.
Before serving dust with Powdered Sugar and place on Foil Cupcake Liners.
