Amazing cheese egg noodles with caramelized onions recipe

If you like Spätzle and Cheese then this is the perfect Recipe. Käsespätzle with Caramelized Onions and a fresh Garden Salad on the side, delicious Lunch or Dinner.

Käsespätzle
Ingredients:

Homemade Spätzle:
400 gr Flour
3 Eggs
Good Pinch of Salt
1 cup Whole Milk

3 Onions, sliced
3 tbsp Butter, divided
Salt
Black Pepper
2 tbsp Parsley, chopped
6 tbsp Whole Milk
4 cups shredded Cheese (Swiss, Monterey Jack, Gruyere or Mozzarella or a mix, your choice)
2 Green Onions, cut on bias

Combine all Spätzle Ingredients, mix to a smooth Batter.
Rest the Batter while you bring a large Pot with Water to a boil, add a good Pinch of Salt.
Push Batter (in batches) through back of Grater or Spätzle Maker.
Let it come up to a boil, stir.
Remove from heat, drain of Water, set aside.
Melt 2 tbsp Butter in med Skillet, add Onions and season with a Pinch of Salt & Pepper.
Caramelize the Onions, remove some for Topping.
To the rest add Nutmeg, Parsley and Milk, combine n keep warm.
In large Skillet on high heat melt 1 tbsp Butter, add Spätzle and Crust them lightly.
On low heat mix in Caramelized Onion Mixture and Cheese.
Top Käsespätzle with reserved Caramelized Onions and sprinkle with Green Onions.
