I took this potato salad to a party and everyone raved about it!

POTATO SALAD INGREDIENTS
1 kg / 2 lb potatoes peeled and cut into 2cm/ 3/4" cubes
250g / 8oz bacon or prosciutto
2 shallot stems finally sliced
A sprig of Dill, about 2 tablespoons, finely diced

POTATO SALAD DRESSING
1/3 cup mayonnaise
1/3 cup sour cream
1 tbsp horseradish cream
1/2 tsp cooking
1/4 tsp black pepper

FRENCH DRESSING

1 tbsp dijon mustard
2 tbsp apple cider vinegar or white wine vinegar
1/4 cup extra virgin olive oil
1 tbsp water
1/2 tsp white sugar
1/2 garlic clove , finely grated or minced
1/2 tsp salt
1/4 tsp black pepper
