Cajun Spice Roast Chicken

1 whole chicken about 3 ½ pounds

2 tsp. salt

1 tsp. black pepper

2 tbs. paprkia and 1 small quartered onion

2 tbs. Cajun seasoning

1 tsp. onion powder

I tsp. garlic powder and any fresh or dried herbs desired.

Preheat oven 350 degrees

Directions: In small bowl mix all dry ingredients.

Rub the outside and inside cavity of the chicken that has been cleaned out and patted dry.

Stuff quartered onion inside of chicken.

Roast uncovered about 90 minutes, in 350 degree oven, basting every 30 minutes with its own juices.

Cooking times may vary depending on size of chicken, typically 20 minutes per pound at 350 degrees.

Whole Carrots, celery and garlic cloves can be roasted alongside chicken for an excellent aroma and add additional flavor to the basting fats.

Discard, vegetables when chicken is done, remove chicken to a serving tray.

Let rest, covered in foil, for 20 minutes before carving.

Excellent with Garlic roasted potatoes and a Garden salad.

*If breast of chicken is browning too quickly, cover this small part with piece of tin foil, last 30 minutes only.

Now you can roast your own chicken.
