Chunky Cold Tomato Soup with Pork & Rice Refreshing Summer Recipe

This refreshing chunky cold tomato soup is packed with flavorful ingredients like pork, rice, garlic and herbs. The tomato base is bright and tangy, with hearty additions of meat, veggies and rice. It's the perfect summer soup - easy to whip up and full of garden-fresh taste. Top it with fresh basil for extra flavor. This cold soup is delicious any time of year!

Serves 6 people
300 calories

Ingredients
500 g chopped tomatoes in juice
100 g tomato passata
1 onion
1 garlic head
400 g pork steaks
Salt to taste
Ground black pepper to taste
1 tbsp all purpose seasoning
2 chicken stock cubes
1 tbsp Polish crispy chicken seasoning
3 tsp dry lovage
10 g basil
70 ml oil
500 ml warm water
50 g rice
80 g celeriac
Preparation
Heat oil in a large pot, over low heat
Add the diced onion and fry for 5 min
Add the diced pork and fry until browned
Add the diced garlic and fry for 5 min
Add the cubed celeriac and fry for another 5 min
Add the basil, chopped tomatoes, passata
Give it a mix, then add the stock cubes dissolved in the warm water
Add the rice in, the fill the pot with water
Add the salt, all purpose seasoning, pepper, chicken seasoning and dry lovage
Boil until the rice and celeriac are cooked.
Tips
You can garnish with fresh chopped basil. If you don’t like cold soups, you can serve it warm instead.
