**Paneer Curry Recipe: Creamy and Flavorful Homemade Delight**
**Ingredients:**
- 250g paneer (cottage cheese), cubed
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, pureed
- 1/2 cup plain yogurt (curd)
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)
- 1/4 cup heavy cream (optional)
- 2 tablespoons cooking oil or ghee
- Salt to taste
- Fresh coriander leaves for garnishing
**Instructions:**
1. **Prepare the Paneer:**
- Cut the paneer into bite-sized cubes. You can lightly fry them for a golden touch, or use them as is.
2. **Saute the Onions:**
- Heat oil or ghee in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
3. **Add Spices:**
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Stir in turmeric, red chili powder, coriander powder, cumin powder, and a pinch of salt. Mix well.
4. **Introduce Tomatoes:**
- Add the tomato puree and cook until the oil starts to separate from the masala mixture. This might take around 5-7 minutes.
5. **Incorporate Yogurt:**
- Lower the heat and add yogurt (curd) while continuously stirring. This prevents curdling.
- Cook for a few minutes until the masala thickens and the oil separates.
6. **Create the Curry Base:**
- Gently add the paneer cubes to the masala base. Mix carefully to coat them with the flavors.
7. **Add Cream (Optional):**
- If you desire a creamier texture, add heavy cream at this stage. Stir well.
8. **Enhance with Garam Masala and Kasuri Methi:**
- Sprinkle garam masala and crushed kasuri methi over the curry. These add depth and aroma to the dish.
9. **Adjust Consistency:**
- If the curry is too thick, you can add some water to achieve your desired consistency.
10. **Simmer and Serve:**
- Let the curry simmer for a few minutes to allow the flavors to meld together.
- Taste and adjust salt and spices according to your preference.
11. **Garnish and Enjoy:**
- Turn off the heat and garnish the paneer curry with fresh coriander leaves.
- Serve the delightful paneer curry with naan, roti, or steamed rice.
**Note:**
