Prepare the Filling:
Grind the soaked and drained chana dal in a food processor to make a coarse paste.
Heat a little oil in a pan. Add cumin seeds, fennel seeds, and asafoetida. Let them splutter.
Add ginger paste and green chili paste. Sauté for a minute.
Add the ground chana dal and cook until it dries out and becomes aromatic.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few more minutes. The filling should be dry and well-spiced. Allow it to cool.
Assemble and Fry the Kachori:
Divide the dough into small equal-sized balls.
Roll each ball into a small disk (approximately 3-4 inches in diameter) on a floured surface.
Place a spoonful of the prepared filling in the center of the disk.
Gather the edges of the dough to cover the filling and seal it properly. Flatten the stuffed ball slightly.
Repeat this process for the remaining dough and filling.
Deep Frying:
Heat oil in a deep frying pan over medium heat.
Gently slide a few kachoris into the hot oil and fry until they turn golden brown and crispy. Make sure the oil is not too hot, as the kachoris might remain uncooked from the inside.
Remove the fried kachoris and drain excess oil on paper towels.
Serving:
Serve the kachoris hot with tamarind chutney, mint chutney, or yogurt. They can also be enjoyed with a cup of chai.
