Garlic Chili Shrimp with smoked paprika, also known as Gambas al Ajillo
Traditionally, Gambas al Ajillo or Spanish garlic prawns or shrimp are so simple to make. Made with only three ingredients, shrimps, garlic, and olive oil. This recipe is inspired from that, and brought to a higher level, with the addition of smoked paprika, chili, wine and butter for that richness and smoothness. Try and buy the best ingredients you can, fresh shrimp is always best, but frozen works well too. When deveining them, cut all the way from the tail to the top so they open nicely while cooking. Make sure you use high heat for that beautiful caramelisation. But don’t over cook them, keep them translucent inside, they will finish cooking when you throw them back in the sauce. So many recipes over cook the shrimp as they don’t set them aside first. This is such an important step, so don’t miss it.Buy the authentic Spanish smoked paprika if you can, the fragrance is so much nicer than regular ones and of course, use high quality extra virgin olive oil. Serve it with crusty bread or saffron rice.

Shrimp Pasta with Roasted Tomato and Chili Sauce - Bucatini Pasta Fra Diavolo - Brother of devil or Fratello del diavolo sauce.
If you like garlic and chili, then this is for you. Known in Italian as the brother of the devil, Fra Diavolo is per its name, is a hot and spicy dish. I have reduced the amount of chili to what I feel is an acceptable level. This allows me to still have the pleasing piquant chili sensation, and the ability to still taste my wine. Having said that, you are the cook, so make it your own. In this recipe I used roasted cherry tomatoes to elevate the flavour to another level. Buy the ripest tomatoes you can find so you have full sweetness and flavour. Otherwise use the tomatoes you have. Enjoy Bucatini Pasta Fra Diavolo!
Coconut Shrimp - Simple, Crispy and Delicious!
If you like coconut shrimp with a crispy coating than this recipe is made for you! A very simple recipe with delicious result. Too many recipes add a ton of ingredients, spices, herb, breadcrumbs etc. which takes away the integrity of the shrimp or prawn. (We call them prawns in OZ). This recipe is made simple so you can taste the real prawn flavour, enhanced with the tropical crunch of coconut. The prawn remains creamy inside with a crispy outer coating. Serve them with a crisp Asian salad with coriander leaves as a side dish. These are great as starter (entree) or appetizer. If making them in advance, you can reheat them by placing them in a cold oven, turned on at at 350°F – 180°C for 20-25 minutes. Enjoy my coconut shrimp!
Thai Style Chili Shrimp on Warm Salad
Who says you can’t make friends with salad. I guarantee this salad will make you lot’s of friends if you serve it up. The idea of a warm salad is to have fresh crunchy but slightly warm vegetables. The shrimps (prawns) need to be hot and of course spicy. This is a great Summer dish although it can also be enjoyed in colder seasons. It’s healthy and incredibly tasty with the aromas of Thailand.
