French Grandmother's Lemon Yogurt Cake - Light & Zesty Dessert

This luscious Lemon Yogurt Cake is a zesty dessert with a delicate crumb. The tangy yogurt and bright lemon create a mouthwatering flavor combo. With just a handful of ingredients, it's an easy cake to whip up for any occasion. The lemony glaze provides the perfect finishing touch. Serves 8 people

Ingredients :

For the sponge:
½ cup plain or Greek yoghurt
1 cup granulated sugar
3 large eggs
1 ½ cup all purpose flour
2 tsp baking powder
½ tsp salt
Grated lemon zest from 1 lemon
½ cup oil
For the glaze:
¼ cup fresh lemon juice from 4 lemons
75 g icing sugar

Preparation:

Preheat oven to 175℃
Spray an 8 inch cake pan with spring and brush to cover with oil
Line the bottom with baking paper and lightly spray the paper
Mix yoghurt, sugar, eggs and blend well
Add the flour, baking powder, salt and lemon zest, mixing just to combine
Add oil and stir well, until smooth
Pour the batter in the baking pan
Bake for 40 minutes
Cool the cake for 10 minutes, in the pan, then turn it over
For the glaze, combine lemon juice and icing sugar in a bowl and stir until smooth
With a pastry brush, pat the glaze all over the cake
Allow the cake to cool completely
Sprinkle with icing sugar if you want
