Freeze Drying Cucumbers.... the BIG ones! #harvestrightcommunity

Did you know that zucchini are not the only sneaky vegtable in the garden? Yes, Cucumbers ALSO like to hide and grow SUPER large. WIth Zucchini you can usually use the larger ones for baking, but unfortunately when many varieties of cucumbers get too big they become bitter and we humans don't like to eat them. Now, medium to large can be pickled as chips or relish, but the monsterous ones become animail feed for most farmers. However, this voulenteer (what we think is an English cucumber) variety has shown that no matter the size, the flavor is STILL there! Today was not the day to make more salads or do any canning, but I HAVE been wanting to experiment with the freeze dryer. I was super happy with the end product. Perfect for snacking, but let me tell ya.... I have some ideas on OTHER ways to use them. You will just have to stay tuned to find out what happens!
