Making Desi Gajak, A Traditional Indian Sweet Made From Jaggery And Sesame Seeds, Can Be A Delightful Experience. Here's A Step-By-Step Guide On How To Make Desi Gajak:
Ingredients:
1 Cup White Sesame Seeds
1 Cup Jaggery (Grated Or Powdered)
1 Tablespoon Ghee (Clarified Butter)
1/2 Teaspoon Cardamom Powder (Optional)
A Pinch Of Salt
Instructions:
Dry Roast The Sesame Seeds: Heat A Pan On Medium-low Heat And Add The Sesame Seeds. Dry Roast Them While Stirring Continuously For About 5-7 Minutes Or Until They Turn Golden Brown. Make Sure Not To Burn Them. Remove The Roasted Sesame Seeds From The Pan And Set Them Aside.
Prepare The Jaggery Syrup: In The Same Pan, Melt The ghee On Low Heat. Add The Grated Or Powdered Jaggery And stir Until It Melts Completely. Keep Stirring Continuously To Prevent The Jaggery From Sticking To The Bottom Of The Pan. Cook The Jaggery Syrup For A Few More Minutes Until It Thickens Slightly.
Check The Consistency: To Check If The Jaggery Syrup Is Ready, Take A Small Bowl Of Water And Drop A Spoonful Of Syrup Into It. If It Forms A Hard Ball Or Threads Between Your Fingers, It Has Reached The Right Consistency. If It Dissolves Immediately, Cook The Syrup For A Little Longer.
Mix The Roasted Sesame Seeds: Once The Jaggery Syrup Reaches The Desired Consistency, Remove The Pan From Heat. Add The Roasted Sesame Seeds, Cardamom Powder (If Using), And A Pinch Of Salt To The Syrup. Mix Everything Well To Ensure That The Sesame Seeds Are Evenly Coated With The Jaggery Syrup.
Shape The Gajak: Take A Greased Plate Or A Flat Surface And Spread The Mixture Evenly Onto It. You Can Use A Greased Rolling Pin To Flatten The Mixture Into A Thin Sheet Or Use The Back Of A Spoon To Press It Down Firmly. Ensure That The Gajak Is About 1/4 Inch Thick.
Cut Into Pieces: While The Gajak Is Still Warm And Pliable, Use A Sharp Knife To Cut It Into Desired Shapes Or Square Pieces. Allow The Gajak To Cool Completely.
Store And Serve: Once The Gajak Has Cooled Down And Hardened, Carefully Separate The Pieces And Store Them In An Airtight Container. This Will Help Maintain Their Freshness. Serve And Enjoy The Desi Gajak As A Sweet Snack Or As A Part Of Festive Celebrations.
