RECIPE
•1.5 lbs chicken tenders
•1 3.75 oz bag Carnivore Crisps Chicken Crisps
•2 eggs, whisked
•1/2 cup Carnivore Crisps Chicken Flour, plus 1/4 cup for curry
•avocado oil spray
•1/2 onion, diced
•1 Tbsp avocado oil or beef butter
•1/4 cup shoyu or coconut aminos
•1-2 Tbsp cumin
•1-2 Tsp turmeric
•1 Tsp garlic powder
•1.5 cups chicken stock
•egg salad (I added turmeric)
•steamed cauliflower rice
•sliced green onions

Pound chicken tenders until they are flat, about 1/2 inch thick. Pulse chicken crisps in a food processor until you achieve a crumb-like consistency. Coat chicken strips in chicken flour, then the eggs, and finally the crushed chicken crisps. Dip them in the chicken flour one last time for extra coating. Place breaded chicken in air fryer basket and spray with avocado oil. Cook at 350°F for 10 minutes. Flip, spray, and cook for an additional 8 minutes. Meanwhile, sauté onions in oil or beef butter. Add spices, then shoyu, chicken stock and chicken flour. Reduce & blend. Serve katsu chicken with curry, cauliflower rice and egg salad. Garnish with green onions.
