In this video I am cooking with my favorite form of lamb..... Ground Lamb! Today we are making Taco Casserole. This is a family favorite.
Here's the recipe:
2 lbs of ground meat of your choice, today I'm using lamb but I've used beef and turkey. You can also use less meat and adjust the remaining ingredients.
3 tbsp chili powder (more or less according to your taste, which applies to all spices listed)
1 tsp garlic powder
2 tsp onion powder
Salt and Pepper - (to taste)
1 cup of milk
1 egg
A few handfuls of Mozzarella Cheese or a type of Mexican blend cheese
A few handfuls of Tortilla Chips , crushed
3 or 4 small-medium sized tomatoes, pureed
(Sometimes I use a can of rotel, pureed. Of course that makes it more spicy)
Instructions - Brown the meat, add spices.
Add the pureed tomatoes.
Mix the milk and egg together, add to the meat mixture.
Allow to cook for a few minutes but not too long. You want some of the liquid to cook out of it but not too much.
Add the crushed tortilla chips. Cook for a few more minutes.
Add a handful of cheese (more or less depending on how cheesy you want it. You are also going to add mozzarella cheese to top after it cooks)
Mix together well.
Preheat the oven to 400 degrees.
Transfer the meat mixture to a casserole dish.
Cook for about 20-25 minutes.
Let cool for a few minutes, then add a layer of mozzarella cheese to top.
***Make this recipe yours, add or omit anything you would like! I think corn and/or black beans would be a nice addition.***
