Homemade sauerkraut recipe from lacto fermented cabbage. This is my all time favorite vegetable side recipe for Lacto fermented cabbage. This is a bonus way to get natural probiotics from delicious fermented food. I like both red cabbage and green cabbage for this sauerkraut recipe. This is the easiest fermentation recipe for preserving any of your vegetable garden harvest!

Recipe for sauerkraut

3lb Cabbage
2T pink sea salt
1t caraway seeds

Thinly slice cabbage, sprinkle with salt and caraway seeds and mix and pound. Let sauerkraut sit for about an hour to bring out the juices. Add mixture to the mason jar and be sure cabbage is submerged under brine. Drop a sour stone weight onto cabbage to keep it submerged. Then secure a lid with a pickle pipe or airlock. Place in a cabinet and test the batch after 10 days. once you are happy with the flavor, put a mason jar lid on it and refrigerate. Enjoy!!
