3 cloves garlic, minced
1-inch piece of ginger, grated
1 teaspoon garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder (adjust to taste)
1/2 teaspoon turmeric
1/2 teaspoon paprika
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon ground cloves
1 cup tomato puree
1 cup heavy cream
1/4 cup plain yogurt
Salt, to taste
Fresh cilantro, chopped, for garnish
Instructions:
In a large skillet, heat the butter and oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
Stir in the minced garlic and grated ginger. Sauté for another minute until fragrant.
Add all the ground spices: garam masala, ground cumin, ground coriander, chili powder, turmeric, paprika, cinnamon, cardamom, and ground cloves. Cook for a couple of minutes to toast the spices and release their flavors.
Pour in the tomato puree and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
Remove the skillet from the heat and let the sauce cool slightly. Use an immersion blender or a regular blender to blend the sauce until smooth.
Return the sauce to the skillet and place it back on the heat. Stir in the heavy cream and plain yogurt. Allow the sauce to gently simmer.
Season the sauce with salt to taste. If the sauce is too thick, you can thin it out with a bit of water.
Add the bite-sized chicken pieces to the sauce and cook for about 15-20 minutes, or until the chicken is cooked through and tender.
Garnish the butter chicken with freshly chopped cilantro before serving.
Serve the butter chicken over steamed rice or with naan bread for a complete and satisfying meal.
Tips:
For a smoky flavor, you can marinate the chicken in yogurt and a bit of smoked paprika before cooking.
Adjust the level of spiciness by adding more or less chili powder according to your preference.
