Hi friends, we are making another unique Steam Canning recipe with the fruit that is in season right now. Rhubarb - Blueberry Jam. Simply delicious and simple to make. Yield: Nine 1/2 pints
4 C Rhubarb
4 C Blueberries
5 C Sugar
Juice from 1 Lemon
3 T pectin

Combine fruit in a large pot. (I shred my rhubarb in my food processor) Add lemon juice. Simmer until the color starts to change to the blueberry color and the fruit starts to soften. Return to the food processor and blend to the consistency you like. Return to pot and add sugar and pectin. Bring to a low boil, stirring constantly as to not scorch, and lower heat to simmer for 25 minutes or so to make sure everything is melded together. Remove from heat. Jar up contents leaving 1/4 in of head space. Remove bubbles. Wipe rims with vinegar to remove stickiness. Use new lids and rings to seal, finger tight. Water bath can or Steam Can for 10 minutes according to directions. Remove from canner and leave to cool for 24 hours. Enjoy within 2 years.
