Fattoush is a delicious Middle Eastern salad known for its fresh and vibrant flavors. It typically features a mix of vegetables, toasted pita bread, and a tangy dressing. Here's how you can make a classic fattoush salad:
Ingredients:
For the Salad:
2 cups chopped romaine lettuce or mixed salad greens
1 cup chopped cucumber
1 cup chopped tomatoes
1/2 cup chopped red bell pepper
1/4 cup chopped red onion
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint leaves
1/2 cup chopped radishes (optional)
1/4 cup chopped green onions (optional)
For the Dressing:
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 teaspoon red wine vinegar
1 teaspoon sumac (a Middle Eastern spice with a tangy flavor)
1 clove garlic, minced
Salt and black pepper, to taste
For the Pita Chips:
2 large whole wheat pita bread rounds
2 tablespoons olive oil
1 teaspoon sumac (optional)
Salt, to taste
Instructions:
Prepare the Salad: In a large salad bowl, combine the chopped romaine lettuce, cucumber, tomatoes, red bell pepper, red onion, parsley, mint, radishes, and green onions.
Make the Dressing: In a small bowl, whisk together the extra-virgin olive oil, lemon juice, red wine vinegar, sumac, minced garlic, salt, and black pepper until well combined.
Toast the Pita Chips: Preheat the oven to 350°F (175°C). Cut the pita bread into bite-sized pieces. Place the pita pieces on a baking sheet, drizzle with olive oil, and sprinkle with sumac and salt. Toss to coat evenly. Bake in the preheated oven for about 10-12 minutes or until the pita chips are golden and crispy.
Assemble the Salad: Just before serving, add the toasted pita chips to the salad bowl. Drizzle the dressing over the salad.
Toss and Serve: Gently toss the salad to combine all the ingredients and coat them with the dressing.
Serve: Serve the fattoush salad immediately as a refreshing appetizer, side dish, or even a light main course. The crispy pita chips add a wonderful crunch to the salad.
