I have been having so much fun processing a whole hog for the first time! I have long loved the idea of learning and practicing old world preservation techniques like dry curing, brining, confi, salami etc... I am utilizing a freezer for most of the meat this year I'll admit but I'm also getting to practice a few of those techniques that interest me so much! dry cure bacon is hanging in my pantry, hams are in brine and will soon join the bacon hanging, I'm giving salami a try 🤞and rillettes are now one of my favorite pantry items! there are so many amazing ways to preserve a bounty of meat harvest without a freezer and I cannot wait to keep exploring the possibilities! some of the best resources I've found as I delve into this new aspect of home making and food preparation are @TheFarmsteadMeatsmith and @rivercottage the river cottage meat book as well as the smoking and curing book have been a wealth of knowledge and Brandon at Farmsteadmeatsmith.com is crazy knowledgeable, relatable, and hilarious!
