So you grew some Painted Mountain Corn.... now what do you do with it? I know a lot of people use this as a "decorative" corn and while it is beautiful, it should definitely be eaten as well as admired! If you are interested in being more self sufficient, corn is probably the easiest grain crop both to grow and harvest as well as more calorie dense per acre than wheat and other grains. A great way to start using your flour corn is to start adding small quantities into baked goods you already enjoy. Today I'm substituting 20% of the flour in my weekly sourdough loaf with painted mountain corn flour. This gives just a little flavor and texture change but does not majorly affect the finished product. Keep in mind this grain is naturally GLUTEN FREE so it would not be appropriate to substitute too much of your regular wheat flour in recipes where gluten structure is needed such as a free form bread loaf. For quick breads, cookies, muffins, tortillas, pie crust etc... you could easily use 💯 painted mountain corn flour in your recipe!
