Carrot - Benefits to our health
Carrot, scientifically known as Daucus carota, is a colorful and edible root vegetable that belongs to the Apiaceae family.
Its origin dates back to Central Asia and the Middle East, but it was more developed in the Netherlands, around the 17th century. Carrot cultivation has spread around the world and today it is a widely consumed vegetable grown in several varieties.
Carrots can be found in yellow, orange, purple, red or white colors, and are consumed raw or cooked, in preparations such as juices, cakes, farofas, soufflés, soups and stews.
The difference between the types of carrot lies mainly in their composition.
Oranges are rich in alpha and beta carotene, which are responsible for the production of vitamin A. Yellow oranges contain more lutein. Purple and red are rich in the powerful antioxidants lycopene and anthocyanins. ï‚·
Carrots are known to be an excellent source of vitamins, minerals and fiber that contribute to a healthy diet.
In general, 100 grams of raw carrots contain about 41 kcal; 9.58 grams of carbs; 2.8 grams of fiber; 4.74 grams of sugar and 0.93 grams of protein.
Carrots are particularly famous for their high beta-carotene content, which can be converted into vitamin A in the body.
Vitamin A is important for eye health, immunity and skin health.
Some compounds in carrots have anti-inflammatory properties that can help with various inflammatory conditions in the body. The antioxidants and phytochemicals in carrots have been studied for their potential effects in preventing certain types of cancer, particularly lung and colon cancer.
The daily intake of carrots is not very defined, but the recommended amount is 2 to 3 servings, equivalent to 160 to 240 grams of carrots.
Carrots can be consumed raw or cooked, as in salads, juices, soufflés, cakes, soups and to prepare meat or fish.
Carrots can also be used to make a syrup that relieves cold and flu symptoms.
To reap all these benefits, it's important to include carrots along with other vegetables and nutritious foods in a balanced and healthy diet.
