Paraiba cuisine is rich and diverse, with indigenous, African and Portuguese influences.

Today we will only talk about some delicious dishes most consumed in Paraíba.

Some of the main typical foods of Paraíba include tapioca or beiju, made from cassava and filled with butter and curd cheese.

Mungunzá: it is a sweet delicacy made from lightly crushed white or yellow corn kernels, cooked in a broth containing coconut or cow's milk, sugar, ground cinnamon or bark and cloves.

Cornmeal couscous steamed: it is made with cornmeal and steamed in a vessel called couscous. It can be served as a main course at a breakfast or lunch, or as a side dish at dinner, with milk, eggs, butter or meat.

Buchada: made with the entrails of the animal cooked in bags made with the stomach of the animal.

Baião de dois: it is a mixture of rice and beans with spices such as bottle butter, chives and cilantro, curd cheese and sun meat served on the same plate, it is a delicious and nutritious dish that represents well the Paraiba cuisine!

In coastal cuisine, the consumption of shrimps, lobsters and crabs is very common.

Dishes such as fried agulhinha, coconut milk fish and pirões are quite typical.

Rubacão: a variation of the baião-de-dois prepared with green beans, white beans or mulatto beans and with a creamy touch produced by the base of milk, pieces of meat and vegetables.

Peixada ao leite de coco: representing the cuisine of the Paraiba Coast, with native species of Fish and, in some cases, crustaceans cooked in a delicious sauce based on coconut milk, tomato and pepper.

Tidy: served with separate side-by-side portions of cassava, jerky, green beans, farofa and vinaigrette, with a touch of bottle butter to finish.

These dishes are delicious and represent well the rich cuisine of the Paraiba Coast.
