Ingredients:
leftover Pasta Salad
eggs
high heat cooking oil
salt & pepper to taste

Cooking Instructions:
1. Add cooking oil to skillet and heat oil on high

2. While the oil is heating, crack eggs into a bowl and ore beat them.

3. Add your pasta salad to the oil and fry while stirring frequently until the ingredients just start to brown slightly

4. Next, flatten the pasta lightly and evenly around your pan, then add your eggs eventually on top of the flattened pasta mixture

5. Cover with lid, turn off heat, and let everything sit for about 10 minutes to allow the eggs to cook, then top with your favorite condiments and enjoy!

Optional:

Some pasta salads may benefit from some cheese being grated into the skillet while cooking. Helps everything bind a little easier and adds some flavor. If you do this, omit the salt.
