Hey y'all! Amazon Prime Day got me! LOL I've been wanting to purchase both the Ninja Blender and a new griddle for quite a while and they were both a great price during the Prime Day sale!! When I opened the boxes I noticed their recipe booklets and thought I would try a recipe out of each of them. Come along with me today as I test these new Amazon kitchen gadgets / appliances and taste test their recipes!

SOUTHWEST BREAKFAST SCRAMBLE RECIPE: (recipe by DASH)
6-8 eggs
6 oz chorizo, casing removed
1/2 med. red onion, diced
1/2 red bell pepper, diced
1/2 cup frozen or pre-cooked corn kernels
1/2 cup canned black beans, drained and rinsed
1/2 cup cheddar or Monterey jack cheese, shredded
1/4 cup green onions, to garnish
1/4 cup sour cream, to garnish
salt and pepper to taste
Cook the chorizo on griddle on dial setting 3 (300 degrees F). Lower the heat to 2 (their recipe says 1, but that was too low) and add onion and bell pepper. Cook for 2 minutes. Add corn and black beans and cook for 1-2 min. more. Whisk eggs in bowl and season with salt. Slowly pour 1/2 of the eggs over the griddle, being careful to avoid the drip outlet. Gently stir the mixture until the eggs have begun to cook. Then, pour the remaining eggs onto the griddle and sprinkle cheese on top. Stir the mixture with spatula until the eggs are cooked to your liking. Serve with green onion and sour cream (or salsa like we did)!
FIRE-ROASTED TOMATO SALSA RECIPE : (recipe by Ninja)
1 14.5 oz can fire-roasted tomatoes with juice
2 tomatoes, cored and seeded
1/2 small red onion, peeled and roughly cut
3 cloves garlic, peeled
1 chipotle pepper, chopped
1/2 jalapeno pepper
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp ground cumin
1/4 cup fresh cilantro leaves
2 tbsp fresh lime juice
Place all ingredients into the blender in the order listed above. PULSE 4-5 times until veggies are roughly chopped or a desired consistency is reached.
