Episode 4: Camping Food Prep

Adelynn, Caleb, and Benjamin prepare a meal in preparation for an upcoming camping adventure.

✨Recipe ✨

Dijon Chicken Tin Foil Packs:
Assorted seasonal vegetables, chopped (the kids used zucchini, green beans, and bell peppers)
Chicken breast, boneless skinless
Lemons or oranges, sliced
Olive oil
Dijon mustard
Whole grain Dijon mustard
Thyme
Rosemary
Parsley
Salt & Pepper (to taste)

Place two lemon or orange slices in the middle of a tinfoil sheet.
Lay raw chicken breast on top*
Add chopped vegetables.
Top with sauce.
Seal tin foil by rolling the middle down and the sides up so no steam can escape.

Cook in 350 degree oven for about 30 minutes until chicken cooked through.

If using as a camping meal, freeze then store in cooler until ready to cook at the campsite! Cook over the fire for 30 minutes, and check frequently for doneness. It may take a little more or less time due to cooking over a flame.

*Can top the chicken breast with shrimp if you’d like to add seafood. The kids forgot, but will cook a seperate foil of dijon shrimp to add while camping!
