Most of the meals I make on my channel are pretty affordable, because I use everyday, common ingredients. I've compiled a few of our favorites in today's video and I hope you find it helpful! Thanks for watching!

BLACK BEAN TACO STUFFED POTATOES:
for baked potato:
medium-to-large Russet potato(es)
olive oil
salt & pepper
butter
shredded cheese

black bean filling:
can of black beans (drained & rinsed
3⁄4 cup diced bell pepper
1⁄2 cup diced onion, yellow or purple
3⁄4 cup frozen corn
1⁄4 cup canned green chiles
taco seasoning, to taste
lime juice, to taste
salt and pepper, to taste
hot sauce of your choice (my favorite is cholula), to taste

toppings
guacamole* (see my lazy girl’s guac recipe)
salsa
sour cream
hot sauce

avocados
tomatoes
salt and pepper, to taste
lime juice, to taste

INSTRUCTIONS
1.) For the baked potato: preheat your oven to 425 degrees. Rinse and scrub your potatoes. Pat potatoes dry and puncture them with a fork to allow steam to escape while baking. Place the potatoes on a foil-lined
baking sheet (or cast iron for crispy skins!) and rub them with a generous amount of olive oil, salt and pepper. Put in oven for 50-60 minutes, flipping them every 20 minutes.
2.) *OPTIONAL* Lazy girl’s guac: Mash avocados in a bowl. Dice tomatoes & add to avocados. Add lime juice, s & p to taste and stir. Chill while potatoes are baking.
3.) For the black bean filling: saute onions and bell pepper in oil until soft and the onions are translucent, about 3-5 minutes. Add black beans and corn and continue to saute mixture for another 3-5 minutes, until corn is thawed and both the beans and corn are warmed through. Add in green chiles and stir. Season mixture with taco seasoning, salt and
pepper. add a splash of water to help “deglaze” the pan and give the mixture some moisture. Finish filling with fresh squeezed lime juice and a couple dashes of hot sauce.
4.) Now it’s time to assemble! Cut the potato lengthwise, give it a squeeze to open and fluff with a fork. Add salt, pepper and as much cheese and butter as you’d like to the insides. Mix insides to create a buttery, salty, cheesy base for the black bean filling. Add a hefty serving of the bean mixture on top of the potato. Top with guac, salsa and sour cream
(and more cheese if you want). Finish everything off with a couple dashes of hot sauce and enjoy!

Kielbasa Skillet Stew
5 strips of bacon
1 med. onion, chopped
1 lb fully cooked kielbasa, thinly sliced
2 cans (15 oz each) great northern beans, undrained
2 cans (8 oz each) tomato sauce
1 can (4 oz) chopped green chiles
2 med. carrots, thinly sliced
1/2 med. green pepper, chopped
1/2 tsp Italian seasoning
1/2 tsp dried thyme
1/8 tsp black pepper
*We added a few cloves of minced garlic too*

In a 12 inch skillet, cook bacon until crisp. Remove to a paper towel to drain. In drippings saute onion and sausage until onion is tender (this is where we added the garlic). *If there's excessive amount of bacon fat, fee free to drain. We didn't. Stir in remaining ingredients and bring to a boil. Reduce heat; cover and simmer for 45 minutes until all vegetables are tender, stirring occasionally. Crumble bacon over the top. Serve over rice.
