Betty demonstrates how to make a Chocolate Chip Iron Skillet Cookie. This is a delicious and fun way to serve chocolate chip cookies.

Chocolate Chip Iron Skillet Cookie

6 tablespoons butter, softened
¾ cup light brown sugar, firmly packed
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 ½ cups semisweet chocolate chips

In a large mixing bowl, mix butter and flour, using a large spoon. Stir in egg and vanilla and mix until smooth. Combine baking powder and salt with flour and add to mixture. Stir well. Fold in chocolate chips. Grease and flour a 10-inch iron skillet. (You may use any ovenproof skillet.) Spoon batter into prepared skillet and spread until top is even. Bake at 350 degrees (F) until a toothpick inserted in the center comes out clean, about 15 minutes. Let cool in skillet for 10 minutes. Serve directly from warm skillet, or turn out onto cooling rack, cool completely, then invert the single large cookie onto a nice serving plate. Cut in wedges to serve. I hope you enjoy the big chocolate chip cookie as much as my family does! --Betty :)
