How to Make the Perfect Beef Wellington

The talented Chef Antoine Camin of Orsay Restaurant -- -- in NYC demonstrates how to cook a delicious Beef Wellington:
1 beef tenderloin
22 oz of mushroom duxelle
6 crepes
Puff pastry (all butter)
Egg wash
Salt and black pepper
1. Season and sear the beef tenderloin, previously tied with twine. Cool down.
2. Lay puff pastry on a baking pan, cover with 3 crepes and ½ inch of mushroom duxelle. Place the beef tenderloin in the center. Cover the meat entirely with ½ of the duxelle, then the crepes, and finish with the puff pastry.
3. Egg wash the entire thing and bake for 35 min at 395 degrees. Remove from oven and let sit for 20 min before slicing. Serve with a beef Madeira sauce.
