We are fishing for pompano off the beach here in Vero Beach, Florida. We catch a jack crevalle and I had several people tell me that smoked jack crevalle is actually pretty good eating. I have never done a smoked jack catch and cook so I thought might as well!

As always, I had a great time fishing in Vero Beach with friends and my brother Alex. I get back home and fillet the small jack crevalle that we caught along with thawing some mahi I had from the florida keys. I put all this fish into the smoker. In addition to the smoked jack crevalle and smoked mahi I also throw in some beef brisket and sausages.

So is smoked jack good? Well I have to admit that this catch n cook on how to smoke jack video turned more into a how NOT to smoke jack fishing video. I left too much brine on the fish and it made the smoked jack crevalle VERY salty.

The jack crevalle was still edible thou, I end up turning all the smoked mahi into fish dip since it was too salty to eat by itself. The catch and cook is not totally ruined! The smoked fish dip actually turned out great! I will smoke some jack crevalle again and not make the same mistake!
