After a day fishing the key largo patch reefs I leave some fish in salt for 12 days *accidently* and then I eat it. This is what happens...

It's a rough day offshore but we decide to go fishing anyway. We head to the key largo patch reefs for some fishing and find lots of waves. We find fish too! And start doing some fishing ready to get a fishing catch and cook under the belt!

After finding the houndfish was full of works I decided to descale and gut the snapper and porgy. I wanted to do a whole fish catch and cook, but had some plans for the day so after cleaning the fish I put them in a salt brine.

I only planned to leave the fish in salt for 12 hours for this catch n cook, but a turkey trip and swordfishing fishing trip came up and I lost track of time. I bought a new boat too! So before I knew it 12 days had passed by.

Now I put the fish in salt for 12 days and I'm going to cook the snapper whole. This is going to be an interesting fishing catch and cook.

Salted fish for 12 days may be great for smoking or other methods of cooking, but when it comes to cooking the fish whole over a fire, probably wasn't the best idea.
