Restaurant Worthy Chicken Fried Rice - Cooking In An RV

We made this incredible Chicken Fried Rice recipe from our humble RV. It requires a few steps but the final outcome is incredible. See for yourself.

Cooking in an RV does provide challenges. Especially if you like to make wonderful, fresh gourmet meals. One of the goals is to cook something wonderful without turning your RV into an oven. Here is an amazing chicken fried rice recipe. The ingredients may vary depending on your preferred Asian flavors. Use your imagination but take note about how we sear our chicken.

We used 5 boneless chicken thighs. Trim off the larger pieces of fat and cut them into bite sized pieces and marinade overnight. In this marinade you'll want the basics: Honey, Soy, Ginger, Rice Vinegar and Fish Sauce. A little bit of each. We added some all-spice, sesame, ground cardamom and hot pepper chili powder.

Next day, prepare a cup of Jasmine rice. Rinse it well and cook it per directions. Do this about 40 minutes before you start cooking so the rice has a chance to cool down.

Sear the chicken thighs in an air fryer at 400 degrees for 15-18 minutes. Stir the bite sized pieces every 5 minutes to make sure each piece is evenly seared and cooked.

After the chicken is done, it's time to stir fry. Again, these vegetables are subject to your desired flavor profile. We used.

(Serves 2 - with leftovers)
5 boneless chicken thighs
1 cup of rice
1 head of broccoli
3 carrots
1 sweet pepper
1 red onion
1 fresh hot pepper (we used serrano)
4 cloves of garlic (minced)
3 green onions
Fresh chopped cilantro
2 tbsp honey
2 tbsp soy (we use Liquid Aminos)
1 tbsp of ginger sesame marinade
1/2 tbsp of fish sauce
1 tbsp of rice vinegar
1 teaspoon of all-spice
1/2 teaspoon of hot chili powder
1/2 teaspoon of white pepper
3/4 teaspoon of ginger powder (normally I would use fresh ginger but didn't have any)
4 tbsp of olive oil

Stir fry the fresh chili pepper and fresh ginger (if you used fresh ginger) in the oil for a few minutes. Add broccoli and carrots. After 5 minutes of frying add the garlic. Then start adding your sauces. One sauce at a time, coat all vegetables with the sauce, then add the next sauce. Add sauces to taste, same with seasonings. When the broccoli and carrots are almost done cooking, add the sweet pepper and onion. Stir fry for about 2 minutes then add the chicken and then the rice. Stir fry it up until the rice has fully separated and starts to absorb the flavor of the dish. Take wok off of heat, stir in bean sprouts
